?
I get the 2.1.* is a version number, but one or the other? Stable vs. beta? Not sure about the lt2.0 number. And sha256? A hash?

deluge-2.1.1-win64-setup.exe

Current version is 2.1.1, so I would recommend 2.1.1 unless you have a particular reason not to use that version.
The differences are below.
deluge-2.1.1-win64-setup.exe.sha256 - Hash of the file to verify file integrity, not required to install or execute
deluge-2.1.1-win64-setup.exe - deluge 2.1.1 with libtorrent version 1.2.x
deluge-2.1.1-win64-lt2.0-setup.exe.sha256 - Hash of the file to verify file integrity, not required to install or execute
deluge-2.1.1-win64-lt2.0-setup.exe - deluge 2.1.1 with libtorrent version 2.0.x
Personally, I use the libtorrent 2.0.x version but that is entirely up to you and your preference, the only difference between installers is the libtorrent library.
