I must be blind because I can't find it in the settings? Can anyone help me out?

I believe it's under 'options' pane/tab if remember right, and quickly googled some pics also looking like that(not on my computer now, and not using gtk-ui myself).

There's an option in deluge preferences for omitting that "add-torrent" dialog altogether and add directly without manual intervention(not enabled by default), in which case you need disable again to make this work.

Edit: Ohh, are you asking how hardcode some default folders in deluge preferences, to choose between during adding downloads, instead? If so, then I answered that before in this thread by Jeps: viewtopic.php?f=7&t=56268&p=235239#p235239

I am a fan of the AutoAdd plugin because its how I worked with the client I used before switching to Deluge. You could use this and set up different watch folders with different download destinations
