Please explain proxy settings to me.

Hello,
I've just installed Deluge due to problems with proxy in uTorrent. Configured all proxy options to one of Socks5 proxies found here and everything was working properly at first sight. UDP trackers were not working, but DHT found many peers in short time . Then changed proxy to another, HTTP only, one just to check how it works and guess what? DHT was still working. This gave me unclear feeling that something is not right with proxy configuration. In the next step returned to previous Socks5 proxy but as an additional layer of protection configured firewall to allow traffic ONLY to/from proxy's IP (and of course localhost, UPnP etc). Now UDP trackers are not working, DHT is not working and only HTTP trackers works.
After this short test it's completely unclear to me if Deluge with proxy keeps my private IP safe or not.
Shouldn't it be that DHT is not working with HTTP proxies due to their lack of UDP support?
Why deluge with configured SOCKS5 proxy tries to connect to some other IP's and if they are blocked in firewall it's not able to login to DHT?
When I open my firewall it connects and downloads properly (mainly due to DHT peers) but isn't in such case my private IP visible to others?
