It would be nice if, as Azureus does already, Deluge could have a feature to parameter "Hidden Service" when using TOR.

Not been able to do so results in a lower transfer rate as no one can reach your "Torified" Deluge at the moment (eg you are sort of "low ID" through TOR)

P.S.: If you're not planning such a feature, I might have a look to add it myself (not now as I have no time, but I might have some around mid may) and contribute.

Maybe we should stick to only using Tor for tracker connections? (although i don't think this wouldn't work on private trackers that check IP's)

I know and i don't mean for the peer connections but for the trackers connections, like with utorrent we can resolves host to proxy so the bittorent are direct with client but hidde with trackers with TOR . so no problem for TOR network, i work long time so and are a good option.
